My how times have changed...

At my house on Christmas Day, we always have casseroles. Something easy to make, and yummy to eat. I do not do the traditional ham and turkey and stuffing and all the trimmings on Christmas as we have that at Thanksgiving and to be really honest all that work is just not my idea of a restful, sleep in heavenly peace sort of holiday.

So in honor of that, here is the recipe for today:

Eggplant Casserole

1 small eggplant
1/2 lb. bulk sausage, crumbled
1 small onion, chopped
1 egg, well beaten
1/2 cup cheddar cheese, grated
1/2 cup dry breadcrumbs
1 tbsp. margarine
1/4 cup cracker crumbs

Peel eggplant and cut into 1 inch cubes; cook in a small amount of boiling water for 10 minutes or until tender. Drain let cool slightly. Cook sausage and onion until onion is tender and sausage is brown. Drain. Combine eggplant, sausage mixture, cheese, egg, and breadcrumbs. Mix well and spoon into a greased 1 quart casserole; sprinkle cracker crumbs over casserole. Dot with margarine. Bake at 350 degrees for 25 minutes.

This sounds very good! You could even take out the sausage and make it vegetarian.
